Not sure where this originated from, but it has been my husband’s go-to recipe for several years now and I’m going to share it with y’all, you lucky people *wink wink*
Best Yam Souffle Ev-Arrr!!!
Ingredients:
40 ounce can cut yams
1/2 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 egg
4 tablespoons melted butter (plus a smidge for the baking dish)
1 bag (16 ounces) mini marshmallows
Directions:
1) Butter 1 quart baking dish
2) Heat oven to 350 degrees
3) Mash drained yams in a large bowl and add brown sugar, salt, cinnamon, egg and melted butter and mix well
4) Place 1/2 of mixture in baking dish, add 1/2 of marshmallows and top with remaining yam mixture
5) Bake for 30 minutes
6) Remove from oven and add remaining marshmallows
7) Bake for an additional 10 minutes until lightly brown

So far, I have only used the AC outlet in the car for plugging the breast pump in during long trips. BUT…this week, last night to be specific, I discovered EXACTLY why that odd little outlet was added to the particular minivan we bought…

Me: Would you like milk or coffee?
Evan pauses to look at me and see if I’m serious (laughing): Milk, mama! I want milk. I don’t like coffee! You like coffee, mama. Do you want coffee?
Me: Yes, I would love some coffee!
Evan (still giggling): I don’t want coffee. When I have coffee, I’ll be old!
I love that kid!
Tacky Sweater Shindig
Last weekend we co-hosted with my brother and his wife, our something or other annual Cider & Sweets Christmas party. This year, having done this party for such a long time now, we decided to theme it and host our first “Tacky Sweater” shindig. My sis-in-law/bestie and I had such fun hunting for ugly sweaters online all summer, and we were tickled to see how many folks unpacked their authentic old-school gear for everyone’s amusement. We also hired a few babysitters this year to watch our kiddos for us so we could enjoy the festivities to the fullest – worth every penny!

Holiday Shin-diggery 2011
There will probably be more than one post about Christmas events. but I gotta start somewhere! We attended an annual gallery event this past Friday evening featuring one of our favorites, Stephen White. He’s a local Carolina artist and every nook & cranny of our home is filled with his beautiful creations. I’ve added a picture of the little one that came home with us this year.
